    Citrus Almond Quick Bread

    Here is a delicious quick bread, one just ready for spring time. Its Citrus Almond Quick Bread. A perfect bread for sharing with a great cup of tea.

    This recipe was developed by Michelle from A Latte Food and I didn’t change a thing. I love a good quick bread and this one will not disappoint.

    Here’s how it goes together

    Ingredients

    • All purpose flour
    • Sugar
    • Baking Powder
    • Salt
    • Lime Zest
    • Lemon Zest
    • Canola Oil (or Vegetable Oil)
    • Milk
    • Eggs
    • Lemon Juice
    • Lime Juice
    • Almond Extract
    • GLAZE
      • Powdered Sugar
      • Lemon or lime juice
      • Almond Extract
      • Almond Slices

    Putting the dry ingredients together

    In a medium sized bowl, mix together the flour, sugar, baking powder, salt and both lemon and lime zest.

    In another small bowl, mix together oil, milk, eggs, lemon juice, lime juice, and almond extract. Whisk together until well combined.

    Put it all together

    This recipe is easy and is put together by hand. Take the wet ingredients and fold them into the dry until completely incorporated.

    Pour into prepared 8×4 pan. I use cooking spray and parchment paper but you can just grease the pan as well. Bake in a 350 degree oven for 55 minutes or until a tester comes out clean. It took perfectly 55 minutes for this loaf to be done. And resulted in a beautifully domed loaf.

    To finish off this delicious little loaf, you glaze it with a lemon-lime powdered sugar glaze and top with almond slices. For ease, I put the glaze in a plastic bottle. Once the almond slices were applied, I topped with a second helping of the glaze.

    This lemon – lime flavored quick bread is integrated with a subtle flavor of almond. Topped with a lemon glaze and sliced almonds, this quick bread is a perfect lemon dessert for your spring afternoon tea.

    Ingredients

    • cup all purpose flour
    • 1 cup sugar
    • 1 tsp baking powder
    • ½ tsp salt
    • 1 tbsp lime zest
    • 1 tbsp lemon zest
    • cup canola or vegetable oil
    • ½ cup milk
    • 2 eggs
    • 2 tbsp lemon juice
    • 2 tbsp lime juice
    • ½ tsp almond extract

    Glaze

    • 1 cup powdered sugar
    • 1-2 tbsp lemon or lime juice, or a mixture of both
    • ¼ cup sliced almonds

    Instructions

    • Preheat the oven to 350 ° and grease an 8½ x 4½ bread pan. Line the bottom of the pan with parchment.

    Bread

    • In a medium sized bowl, sift together flour, sugar, baking powder, salt, and both lemon and lime zest. Set aside.
    • In a small bowl, mix together canola oil, milk, eggs, lemon and lime juice and almond extract. Whisk until well combined.
    • Slowly fold the wet ingredients into the dry ingredients. Once the mixture has just been combined, pour the batter into prepared bread pan. Bake for 55-60 minutes, or until a cake tester comes out clean.
    • Allow to cool 10-20 minutes before removing from the pan and placing on a cooling rack.

    Glaze

    • Mix lemon juice or lime juice (or a combination), almond extract, and powdered sugar together until well combined.
    • With the bread on the cooling rack, pour glaze over the bread. Immediately, while the glaze is still wet, sprinkle the almonds on top. Allow glaze to set, about five minutes or so before cutting.

    Notes

    Ingredients

    • All-purpose flour
    • Poppy Seed
    • Baking Powder
    • Baking Soda
    • Pinch of salt
    • Unsalted butter
    • Sugar
    • Eggs
    • Vanilla
    • Zest from two lemons
    • Lemon juice
    • Buttermilk
    • Powdered Sugar

    Preparing the dry ingredients

    In a bowl, add the flour, baking powder, poppy seeds, baking soda and pinch of salt. Using a fork, combine. Set aside.

    Preparing the Liquid Ingredients

    In a mixing bowl, beat the butter and sugar together until fluffy. Then add the eggs and vanilla, beat well.

    Prepare the lemons for the liquid ingredients. Zest two lemons and juice one of them. Add to the liquid mixture and mix well. You will use the juice of the second lemon for the glaze.

    Add the dry ingredients to the liquid ingredients. Mix well.

    Baking the Bread

    Preheat the oven to 325 degrees and prepare 2 9×5 loaf pans with baking spray and lining the bottom with parchment paper. Pour the batter into the pans and place in the over for 45-55 minutes or until a tester comes out clean. Don’t over bake these bread – they will come out dry.

    Allow the breads to cool for 15 minutes. Remove from pans and allow to completely cool on baking racks.

    For the glaze, which is the best part, take the powdered sugar and lemon juice from the second lemon and mix together until smooth. Take the completely cooled bread and pour over the top.

    Lemon Poppy Seed Bread

    This is a sweet yet slightly tart quick bread with a lemon glaze. Perfect for afternoon tea or a slice on your own.

    Ingredients

    • 3 cups all purpose flour
    • 3 tbsp poppy seed
    • ½ tsp baking powder
    • ½ tsp baking soda
    • 1 pinch salt
    • 1 cup unsalted butter at room temperature
    • 2 cups sugar
    • 4 eggs
    • ½ tsp vanilla
    • Zest from two lemons
    • Juice of one lemon Save second lemon for glaze
    • 1 cup buttermilk
    • 1 cup powdered sugar To be used for glaze

    Instructions

    • Preheat ovent to 325°. Prepare 2 9×5 loaf pans with cooking spray, lining bottom of pan with parchment.
    • In a separate bowl, place flour, poppy seed, baking soda, baking powder, and pinch of salt. Set aside.
    • Using electric mixer, beat butter and sugar together until fluffy.
    • Add eggs and vanilla and beat well.
    • Add buttermilk, zest of 2 lemons, juice of one lemon and combine.
    • Combine dry ingredients with liquid. Combine until fully incorporated.
    • Pour batter into prepared pans.
    • Bake for 45 – 55 minutes until tester comes out clean. Remove from oven and let cool for 15 minutes before removing breads from pans. Let continue to cool on wire rack.

    Glaze

    • Combine 1 cup powdered sugar and the juice from the second lemon. Whisk until smooth. Pour over breads.
